Almond Oatmeal Crispies (Cookie Mix) |

Source: Betty Crocker Homemade without hassle. Whip up a batch of almond lover's cookies in no time. Ingredients:
1/2 cup butter or 1/2 cup margarine, softened |
1 (7 -8 ounce) package almond paste (not marzipan) |
1 egg |
1 (17 1/2 ounce) package betty crocker oatmeal cookie mix |
1 tablespoon water |
24 whole almonds, unblanched |
1/2 cup powdered sugar |
1/4 teaspoon almond extract |
1 tablespoon water |
Directions:
1. Heat oven to 375°F 2. In large bowl, beat butter and almond paste with electric mixer on medium speed until well blended. 3. Beat in egg until well blended. 4. Stir in cookie mix and 1 tablespoon water until soft dough forms. 5. Using cookie scoop (2-tablespoon size), drop dough by level scoopfuls 2 inches apart onto ungreased cookie sheets. 6. Press 1 almond in center of each mound of dough. 7. Bake 12 to 14 minutes or until edges are light golden brown. 8. Cool 1 minute; remove from cookie sheets to cooling rack. 9. Cool completely, about 15 minutes. 10. In small bowl, mix icing ingredients until smooth. 11. Drizzle icing over cookies. |
