Almond-oat Macaroons

This is my cousins recipe and a time tested favorite. A great cookie for those who do not care for coconut.
Ingredients:
4 cups oats (regular oat meal)
2 cups brown sugar
1 cup oil
2 eggs, beaten
1/2 tsp. salt
1 tablespoon almond extract
1/2 cup toasted chopped almonds (optional - my version)
Directions:
1. Mix first 3 ingredients together in a large bowl and let stand at least 4 hours or over night.
2. Mix the rest of the ingredients into the oat mixture before baking.
3. Bak at 350 degrees for 10 min.
