Almond Joy To Your Hearts Delight |

Canada (maybe just the West Coast) does not sell Almond Joy candy bars. I often have to drive across the border to get my chocolate, coconut almond fix. This copycat recipe came from a caring friend. Ingredients:
1 c salted roasted almonds |
300 ml of sweetened condensed milk (1 can) |
1 tsp vanilla extract |
2 c powdered sugar |
2 c shredded coconut |
3 c semisweet chocolate chips |
1 tsp shortening |
Directions:
1. Blend the condensed milk and vanilla. 2. Add the powdered sugar to mixture a little bit at a time, stirring until smooth. 3. Stir in the coconut. The mixture should be firm. 4. Pat the mixture firmly into a greased 9x13x2-inch pan. Chill in the refrigerator until firm. 5. Melt the chocolate with shortening in the microwave, stirring often in 1 minute intervals. 6. Remove the coconut mixture from the refrigerator and cut it into 1x2-inch bars. 7. Place bars on wire rack over parchment. 8. Add 2 almonds on top of each bar. 9. Drizzle melted chocolate over bars. 10. When set turn over and dip other side. Return to wire rack. |
