I'm asked for this cookie every year. This recipe orginally came from a Land o Lakes pamphet.. I have made a couple of changes... Ingredients:
2 cups flour |
1 cup sugar |
1 cup butter - softened |
2 eggs - separated |
1 teasp. cinnamon |
1/2 teasp. salt |
1 cup sliced almonds ( i use a little more) |
Directions:
1. in a mixer bowl: put flour,sugar, butter, 1 egg yolk, cinnamon, salt. 2. beat at low speed for 2-3 mins. 3. divide dough in half. Press each half onto an ungreased cookie sheet (you will have 2 sheets) 4. in a small bowl beat 1 egg white until foamy. spread over 1 sheet of dough. repeat with 2nd egg white spread on second sheet 5. sprinkle with nuts.. press down lightly 6. Bake at 350' for 12-15 mins or until very lightly brown 7. immediately cut into 2'' squares 8. you will have 1 extra egg yolk save it , I have another cookie recipe that will use it. |
