This cheesecake is so good and easy to prepare. Ingredients:
crust |
1 cup graham cracker crumbs |
1/4 cup sugar |
1/4 cup butter |
1/4 cup ground-up almond slivers |
filling |
2 lbs cream cheese |
4 eggs |
1 3/4 cups sugar |
1 tsp. vanilla |
juice & grated rind of 1 lemon |
2 tsp. almond extract |
2 tbsp. dark rum |
topping |
1/2 cup whipping cream, whipped |
1/4 cup sour cream |
1 tbsp. sugar |
Directions:
1. Combine all ingredients for crust and press into the bottom of the springform pan. 2. Mix together all the filling ingredients and pour onto top of crust. Bake at 325 degrees for 1 - 1 1/2 hours. Top should be lightly browned and cake tester come out clean. 3. Turn off oven and let cake cool in oven for 20 minutes. Do not remove cake from springform pan until it has completly cooled. 4. Mix together topping ingredients and spread on top of cake before serving. |
