Wonderful almond cake with a fantastic apricot brandy sauce.From Gourmet. Ingredients:
for cake |
3/4c butter |
1c sugar |
2 lg eggs plus 1 lg yolk |
1/2c apricot preserves |
1/3c sour cream |
1tsp pure vanilla |
13/4c flour3/4tsp baking powder |
1(7oz) tube almond paste,crumbled |
confectioners sugar,toasted almond slices and blackberries for garnish |
for sauce |
1/4c butter |
1c brown sugar |
1/3c heavy cream |
1/4c peach brandy |
1/4c peach preserves |
Directions:
1. Make cake: Preheat oven to 350. Lightly butter a 9 round cake pan;set aside. Beat butter and sugar in a large bowl with electric mixer at med. speed until pale and fluffy,about 3 to 4 mins. 2. Add eggs and yolk,one at a time,beating well after each addition. Add the preserves,sour cream,and extract and beat for 1 min. more. Stir together the flour,baking powder,and salt;add to batter along with almond paste and fold till just combined. Spread evenly in prepared pan and bake 45 to 55 mins. or till center of cake is firm when the pan is lightly tapped.(Note: The cake will be very moist in center because of almond paste. 3. Make Sauce: Melt butter in med. saucepan. Stir in brown sugar and cook 2 mins. Stir in remaining ingredients and simmer over low heat for a few mins. more. 4. To serve: Lightly dust confectioners sugar on top of cake,sprinkle with almonds and blaxkberries,and serve each slice,drizzled with some of the sauce. |
