quick sauteed chicken with almond butter Ingredients:
1 onion, diced |
2 tablespoons olive oil |
1 lb chicken breast |
8 oz. mushrooms, sliced |
1 1/2 cups chicken broth |
1 tablespoon thyme |
1 teaspoon marjoram |
1 pinch sage |
1/4 teaspoon black pepper |
1/3 cup almond butter |
1 tablespoon white wine vinegar |
Directions:
1. Saute onion, chicken breast, and mushrooms in olive oil over medium-high heat until browned. 2. Add spices, saute until fragrant. 3. Dilute the almond butter with the chicken broth , and add to the pan. 4. Bring pan to a simmer, stirring occasionally until most of the liquid has evaporated and the almond butter sauce is thick. |
