I love finishing up meals with a tiny espresso and a piece of biscotti. This is one of my favorite recipes: simple but rich, with a wonderful almond aroma. Ingredients:
2 c chopped almonds |
1 1/2 c sugar |
3 c flour |
1 stick butter, room temperature |
3 eggs |
1 tsp almond extract |
Directions:
1. Preheat oven to 350°F 2. Mix together softened butter, sugar, flour, eggs, and almond extract. 3. Add almonds and make a big log. Flatten into a rounded slab, approximately 1 inch high at the center and 4 inches wide. 4. Bake for about 30 minutes (do not cook completely). 5. Allow to cool a little, then cut the roll on diagonial into slices approximately 1/2 thick. Put the slices cut side up back into the oven for 10 minutes on one side. 6. Flip slices, and bake 5 minutes on the other. Do not overcook! The slices should be golden but not brown. |
