Almanzo Wilders Fried Apples N Onions |

This is one of my most favorite side dishes! It comes from the Little House on the Prairie cookbook where it took the excerpt from Farmer Boy. Ingredients:
1/2 lb bacon |
6 yellow onions sliced |
6 tart apples (i use granny smith or fugi) sliced |
2 tbsp brown sugar |
Directions:
1. In a large skillet fry the bacon until brown and crisp 2. Remove bacon and put on a warming platter 3. Drain all but 1 tbsp of bacon grease 4. Add the onion slices 5. Cook over medium high heat for about 3 minutes 6. Add the apple slices 7. Stir in the brown sugar 8. Cover the skillet and let cook until onions and apples are tender but not mushy 9. Stir enough to prevent scorching 10. Remove to large serving bowl and crumble bacon on top. 11. Serve immediately. |
