A high fiber dish that satisfies Ingredients:
16 ounce uncooked farfalle pasta |
1 lb italian turkey sausage, cut into 1/2 inch slices |
4 tbsp olive oil, divided |
4 cloves garlic, diced |
1/2 onion, diced |
2 small zucchini, chopped |
2 small yellow squash, chopped |
1 3/4 cup tomatoes, chopped (1 14oz can) |
1 green bell pepper, chopped |
20 leaves fresh basil, chopped |
2 teaspoons chicken bouillon granules |
1/2 teaspoon red pepper flakes |
Directions:
1. cook pasta according to directions on the box. reserve 1/2 cup of pasta water when draining the pasta 2. brown sausage in a large skillet over medium heat. 3. add 2 Tbsp olive oil, garlic, onion, zucchini, squash, tomatoes, and bell pepper. Saute until soft (3-5 minutes). 4. Mix in bouillon and red pepper flakes. 5. Add pasta and basil to the skillet stir to combine, adding some or all of the pasta water if necessary. 6. serve with parmesan cheese if desired (not included in the calorie calculations) |
