I made a version of this as peanut brittle, but had to try it with cashews. Outstanding! So crispy and decadent...P.S. This recipe is made in an 1100-watt microwave. P.S. If you live in an area that has high humidity, this recipe may not work for you; try to make on a day with low humidity. Ingredients:
1 cup sugar |
1/2 cup light corn syrup |
1/2 teaspoon salt |
1 teaspoon butter |
1 teaspoon vanilla |
1 cup cashews (1/4 c. of them rough chopped) |
1 teaspoon baking soda |
Directions:
1. Mix sugar, salt and corn syrup in microwave safe bowl. 2. Microwave for 3 minutes -15 seconds; Stir. 3. Microwave 2 minutes. Mix in vanilla, butter and cashews. 4. Microwave 1 minute; Stir in baking soda. 5. Quickly turn out on onto a greased pan (or Silpat), using a silicone or greased spatula. 6. Spread to 1 nut depth with off-set spatula. 7. Cool and break into bite-sized pieces. |
