Tasty, filling, low cal and nutritious vegetable stir-fry. Makes aprox four 1 cup servings. Ingredients:
1 cup cooked brown rice |
1 cup broccoli, chopped |
1/4 cup onion, chopped |
1/2 cup green bell pepper, chopped |
1/2 cup carrots, chopped |
1/4 cup celery, chopped |
1/2 cup zucchini, chopped |
1 tbsp minced garlic |
1 cup mushrooms, chopped |
2 tbsp olive oil |
1/2 cup water |
Directions:
1. Cook brown rice to directions on package. 2. Heat water and olive oil in deep skillet or wok. 3. Add onions and mushrooms, cook until onions begin to brown/caramelize. 4. Add remaining ingredients and more water if necessary to prevent sticking. Cook until vegetables begin to tender. 5. Season with herbs to taste for negligible additional calories. (I like parsley, oregano and basil. Thyme or rosemary can also be a nice option) 6. Remove from heat and serve. |
