This ia another good one from McCall's 1993 April Issue. Ingredients:
1 tablespoon butter or 1 tablespoon margarine |
2 stalks celery, chopped |
2 medium carrots, shredded |
1 small red onion, chopped |
1/2 teaspoon ground cumin |
1/4 teaspoon fresh ground pepper |
1/4 teaspoon salt (i omit the salt) |
1/2 lb ground turkey |
1/2 lb turkey sausage, casings removed |
1 cup plain nonfat yogurt |
2 tablespoons minced fresh parsley or 1/2 teaspoon dried parsley |
1/2 teaspoon ground cumin |
1/4 teaspoon salt (i omit the salt) |
1/8 teaspoon fresh ground pepper |
6 small whole wheat pita bread, toasted,split (i use whole wheat hamburger buns) |
6 leaves red leaf lettuce (i use iceburg) |
6 slices tomatoes |
Directions:
1. Make Burgers:. 2. In nonstick skiller, over medium heat, melt butter. 3. Add vegetables, saute 8 minutes, or until very tender. 4. Add cumin, pepper, and salt; mix well. 5. Remove from heat and allow to cool. 6. Remove 1/4 cup of vegetables and set aside in medium bowl. 7. Combine remainder vegetables with turkey and sausage; mix well with hands. 8. Form into 1/2 inch thick patties. 9. Broil burgers 4 to 6 inches from heat, for 12 minutes, turning once. 10. Make Sauce:. 11. Into bowl with reserved vegetables, stir in all the sauce ingredients. 12. Serve burgers in pitas (or on buns) with lettuce, tomatoes, and sauce. |
