Pumpkin muffins= LOVE! Pumpkin muffins that are actually healthy= superLOVE!
Ingredients:
1 c whole-wheat flour
1 c flour
3/4 c sugar (or stevia, if you want really healthy)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
1/4 c vegetable oil
1 c pumpkin puree
1 large egg
1 c unsweetened vanilla almond milk
1/4 c dried cranberries
Directions:
1. Preheat oven to 350 degrees.
2. Mix wet and dry ingredients separately, then combine.
3. Fill muffin cups and bake for 22 min.
4. Enjoy!
