All-Day Bolognese Sauce

This recipe is out-of-this-world delicious! We're talking restaraunt-quality good! It's hard to keep spoons out of the pot while this is simmering all day, but the recipe makes plenty o' sauce, so I don't mind looking the other way (I'm guilty of it myself, after all)!!
Ingredients:
1 lb lean ground beef
1 large onion, chopped
6 garlic cloves, minced
1 teaspoon oregano
2 teaspoons basil
1/2 lb beef neck bone
28 ounces tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
2 (6 ounce) cans tomato paste
3 cups water
salt, pepper, and crushed red pepper to taste
Directions:
1. In a large pot, sauté onion, garlic, oregano, and basil with the ground beef.
2. Add the neck bones and let simmer with the lid on until the onions are transparent.
3. Add the tomato sauce, stewed tomatoes, tomato paste, and water.
4. Cover and simmer for several hours.
5. Before serving, remove and discard the neck bones.
6. Serve over whole wheat spaghetti noodles.
