This recipe came from a 4-H cookbook I had back in the early 80's. It's nothing like real jambalaya. Ingredients:
2 tablespoons butter |
1 lb ground beef |
1/2 cup onion, diced |
1/4 cup green pepper, diced |
1 (28 ounce) can diced tomatoes |
1 small bay leaf |
1 teaspoon salt |
1/2 teaspoon sugar |
1 1/2 cups minute rice |
Directions:
1. Melt butter in large skillet. 2. Saute onion, green pepper, and beef until browned. 3. Drain fat. 4. Drain tomatoes, and add enough water to juice to make 1 1/2 cups. 5. Add tomatoes, bay leaf, salt, sugar, and liquid. 6. Bring to a slow boil. 7. Cover and simmer for 5 minutes. 8. Add rice. 9. Cover and simmer another 5 minutes. |
