All-American Grilled Cheese with a Twist

Dress up your traditional grilled cheese sandwich with by adding sliced plum tomatoes and fresh herbs.  Serve with soup or as a standalone meal.
Ingredients:
8 (1-ounce) slices country white bread
2 cups (4 ounces) shredded sharp cheddar cheese
8 (1/4-inch) slices plum tomato (about 2 tomatoes)
1/4 cup thinly sliced fresh basil
cooking spray
Directions:
1. Place 4 bread slices on a work surface; arrange 1/2 cup cheddar cheese on each slice. Top each slice with 2 tomato slices and 1 tablespoon basil. Top with remaining 4 bread slices.
2. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add sandwiches to pan; cook 4 minutes or until lightly browned. Turn sandwiches over; cover and cook for 2 minutes or until cheese melts.
