Ingredients:
16 ounce(s) boneless skinless chicken breast butterflied and lightly pounded |
1/2 cup(s) pecans divided, 1/4c fine ground, 1/4 c coarse ground |
1 eggs beaten |
4 egg whites beaten |
2 pinch(s) black pepper to taste |
2 pinch(s) salt to taste |
2 tablespoon(s) oil for frying |
Directions:
1. Season Chicken with salt and pepper. Combine Eggs in one bowl. Dip chicken in Fined ground nuts and coat. Next dip the chicken in the egg mixture, then into the Coarsely ground nuts, coating evenly. Fry the chicken on Medium heat until done, approximately 4 minutes on each side.Place on paper towel to drain oil. Season with Salt and pepper to taste and serve. |
