Will surely satisfy a hearty appetite. This sugar-free recipe is tops with waist watchers. Diabetic Exchanges: 2 starch, 1 vegetable. I have not tried this, just posting for safe keeping. Ingredients:
2 slices bacon |
1 cup chopped onion |
1 cup ketchup |
1/4 cup white vinegar |
1/4 cup water |
2 teaspoons prepared mustard |
2 teaspoons worcestershire sauce |
1/4 teaspoon salt |
1/4 teaspoon pepper |
30 ounces great northern beans, rinsed and drained (2-15 1/2oz cans) |
16 teaspoons equal sugar substitute (16 pkts, 5 tsp equal for recipes, or 2/3 cup equal spoonful) |
Directions:
1. Cut bacon into 1 -inch pieces; cook in a medium saucepan over medium-high heat for 3-4 minutes. Add onion and cook until bacon is crisp and onion is tender, stirring occasionally. Stir in the ketchup, vinegar, water, mustard, worcestershire sauce, salt, and pepper. Stir in beans. 2. Reduce heat; cover and simmer 15-20 minutes. Stir in Equal. |
