This evolved from a basic spinach dip recipe, but I changed it up a bit. Whenever my family gets together, the first thing everyoneyone asks is: Where's the spinach dip? I usually quadruple it for such occasions, and it's very rare to have any left over! Even people who don't like any ingredient that I put in, love this dip! Best with Ritz crackers or the like, but if I'm out I'll eat it on bread, tortillas....anything really. It's that good!
Ingredients:
1 cup mayonnaise
1 (16 ounce) container sour cream
1 (1 1/4 ounce) package vegetable soup mix
1 bunch celery, finely chopped
1 bunch green onion, finely chopped
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
Directions:
1. Mix sour cream, mayo, and soup mix in a large bowl(If you haven't chopped your celery and onions yet, it's a good idea to cover the bowl and put in the fridge, as it allows the dehydrated veggies in the soup mix soften up and gives the flavors a chance to blend).
2. Add the chopped celery and onions. Mix thouroughly.
3. Add the spinach, little by little, stirring to make sure there aren't any spinach clumps and the consistancy of the dip is even.
4. Chill and enjoy!
