Alfredo's Southwestern Potato Soup |

Ready, Set, Cook! Special Edition Contest Entry: 2 of the world's favorite cuisines meet in this one of a kind soup! Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion |
1 (16 ounce) jar ragu cheesy classic alfredo sauce |
4 slices thick cut bacon, rough chopped |
4 green onions, chopped (white & pale green parts for soup, tops for garnish) |
1 (1 1/4 ounce) package taco seasoning (used mccormicks hot) |
2 cups milk (divided) |
1 1/2 tablespoons flour |
3 tablespoons vegetable oil |
Directions:
1. Preheat oven to 400 degrees. 2. Toss potatoes with vegetable oil and Taco Seasoning. 3. Roast potatoes for 30 minute tossing once halfway thru. 4. In 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve. 5. Drain all but 1 - 1/2 tbls. bacon grease. Add green onions and saute 1 minute until soft. 6. Add flour and whisk 1-2 minute. 7. Add 1 cup milk and whisk until slightly thickened, 1-3 minute. 8. Add Alfredo sauce and stir to combine. 9. Add potatoes and reserved bacon and stir. 10. Add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes. 11. Serve with green onion tops as garnish. |
