Alfredo's Southwestern Potato Soup

Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion
1 (16 ounce) jar ragu cheesy classic alfredo sauce
4 slices thick cut bacon, rough chopped
4 green onions, chopped (white & pale green parts for soup, tops for garnish)
1 (1 1/4 ounce) package taco seasoning (used mccormicks hot)
2 cups milk (divided)
1 1/2 tablespoons flour
3 tablespoons vegetable oil
Directions:
1. Preheat oven to 400 degrees.
2. Toss potatoes with vegetable oil and Taco Seasoning.
3. Roast potatoes for 30 minute tossing once halfway thru.
4. In 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve.
5. Drain all but 1 - 1/2 tbls. bacon grease. Add green onions and saute 1 minute until soft.
6. Add flour and whisk 1-2 minute.
7. Add 1 cup milk and whisk until slightly thickened, 1-3 minute.
8. Add Alfredo sauce and stir to combine.
9. Add potatoes and reserved bacon and stir.
10. Add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes.
11. Serve with green onion tops as garnish.
