This may not be very original, but it's the way i make pasta salad. Ingredients:
1 lb. box of pasta (i like the tri-color fusilli or spirals, but mom always made it with small shells or choo-choo wheels) |
this is also awesome with spinach pasta, or better yet, tortellini |
1 bell pepper (medium) |
1 onion (medium) |
2 radishes |
15 oz can of baby peas |
2 carrots |
2 stalks of celery |
1/2 c. milk |
1/2 c. honey dijon salad dressing |
1 c. miracle whip |
Directions:
1. Prepare pasta according to box (al dente), then chill pasta 2. Dice celery, onion and pepper 3. Thin-slice carrots and radishes (almost paper thin!) 4. Combine pasta, honey dijon salad dressing, diced/sliced veggies and can of peas. 5. Mix well 6. Combine milk and Miracle Whip. 7. Add to mixture and fold in. 8. For best results, cover tightly with cellophane wrap and chill in GLASS bowl(s) [this recipe makes a lot!] for 4 hours. It's even better overnight! 9. Optional add-ins: 1/2 c. walnuts; or pepperoni (quarter cut each slice). |
