Alethea’s Spicy Tortilla Soup |

Great food for the soul! Ingredients:
1 small onion, finely chopped |
2 garlic cloves, minced |
1 tablespoon vegetable oil |
6 cups chicken broth |
1 1/2 cups fresh green chilies |
1 1/2 cups fresh tomatoes, diced |
1/4 cup cilantro, chopped |
1/2 teaspoon ground cumin |
salt and pepper |
1/2 tablespoon fresh lime juice |
1 cup cooked chicken, diced |
Directions:
1. In a saucepan, sauté the onions and garlic in the vegetable oil until soft. In a large pot, combine the remaining ingredients, except the cheese and tortilla strips. Add onions and garlic. Simmer over low heat for one hour. 2. TO SERVE: Ladle soup into individual bowls up to 3/4 full. Sprinkle with tortilla strips and cheese. Garnish with cilantro sprigs or chopped jalapeño. Serve with hot flour or corn tortillas. |
