yummy old-fashioned albondigas soup. like my hubby's grandma used to make. Ingredients:
meatballs |
1/2 lb ground beef |
1/2 lb chorizo |
1 egg, beaten |
2 garlic cloves |
1/2 cup cooked rice |
1/2 tsp salt |
1/4 tsp pepper |
1 tsp cumin |
soup |
6 cups chicken broth |
1/2 cup diced onion |
1 (16oz) can plain diced tomatoes |
1/2 tsp cumin |
1 tsp oregano |
1 large zucchini, sliced |
1 carrot, diced |
chopped cilantro - to taste |
salt and pepper |
Directions:
1. Make meatballs - combine everything and mix thoroughly 2. form meatballs - roll between palms 3. make 20-24 meatballs, set aside 4. combine chicken broth, onion, carrot, zucchini, tomatoes, cumin, oregano and cilantro in large pot 5. bring to boil, reduce heat, simmer 10 minutes 6. drop meatballs into soup (make sure soup is slightly boiling, the meatballs need to cook quickly) 7. return to simmer, cook another 10 minutes 8. season with salt and pepper to taste |
