My wife's authentic Albondigas soup recipe. One of our family favorites Ingredients:
1 lb ground beef |
1/4 cup long grain rice |
1 egg |
1 tablespoon fresh cilantro |
1 teaspoon seasoning salt |
1/4 cup ice water |
32 ounces chicken broth |
14 1/2 ounces tomatoes (diced stewed with liquid) |
1 stalk celery |
1 large carrot, diced |
1 medium potato, diced |
1/4 teaspoon garlic powder |
Directions:
1. Combine ground beef, rice, eggs, cilantro, seasoned salt and ice water. form into small meatballs. 2. In a large saucepan, combine broth with vegetables and garlic powder. bring to a boil. 3. add meatballs. 4. Reduce heat, cover and simmer for 30-40 minutes. 5. Stir occasionally. |
