This is one of the first things I remember baking as a child. My mom would let me mix it up all by myself and it was the first recipe I had memorized. I never knew where she got it until one day recently I was looking at the box of Alber's cornmeal, and lo and behold, it was on the box! Nevertheless, it's a good recipe and I still enjoy it, especially with a little butter and honey. Ingredients:
1 cup cornmeal |
1 cup flour |
1/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
1/3 cup oil |
1 egg |
1 cup milk |
Directions:
1. Preheat oven to 400 degrees. 2. Grease a 8x8 baking dish or a 9-inch pie plate. 3. Combine all ingredients; pour into prepared dish. 4. Bake for 25 minutes. 5. Let cool slightly before cutting. |
