Alabama Pan-Fried Catfish |

Ingredients:
6 dressed catfish (about 4 pounds) |
2 teaspoons salt |
1/4 teaspoon pepper |
2 eggs, beaten |
2 tablespoons milk |
2 cups cornmeal |
vegetable oil |
tartar sauce |
Directions:
1. Rinse fish thoroughly in cold water, and pat dry. Sprinkle fish evenly with salt and pepper, and set aside. 2. Combine eggs and milk in a medium mixing bowl; mix well. Dip fish in egg mixture, and roll in cornmeal. 3. Heat 1/8 inch oil to 350° in a large heavy skillet. Add fish, and fry 5 minutes on each side or until golden brown. Drain fish well on paper towels. 4. Transfer fish to a warm serving platter, and serve immediately with tartar sauce. |
