A healthy and hearty soup from the cookbook Delicious Ways to Lower Cholesterol. Ingredients:
1/2 cup onion, chopped |
2 teaspoons butter, melted |
1 (14 1/2 ounce) can tomatoes, diced |
1 cup potato, diced |
1 1/4 cups catsup |
1/4 cup water |
2 tablespoons worcestershire sauce |
1/4 teaspoon pepper |
1 bay leaf |
1 lb catfish fillet, 1-inch pieces |
Directions:
1. Saute onion in butter in a large saucepan until transparent. 2. Add tomatoes and next 6 ingredients to saucepan. 3. Cover and bring to a boil. Reduce heat, and simmer 30 minutes, stirring occasionally. 4. Gently stir in fish; continue to simmer 20 minutes or until fish flakes easily when tested with a fork. Remove bay leaf before serving. |
