This is a vegan recipe that can be used as an appetizer or a side dish. Have a chutney at the ready to accompany it. This dish originated from Nigeria. Ingredients:
1 cup black eyed peas |
1/4 tsp. black pepper |
oil for deep frying |
salt to taste |
Directions:
1. Soak the peas overnight. The next day drain. 2. In blender, grind peas with salt and black pepper to taste until the beans become like paste. 3. The peas should look like a paste but a little coarse. Add some water if necessary. 4. Heat oil in frying pan. when the oil is hot scoop one spoonful of paste in oil; repeat until all of paste has been used. 5. Turn occasionally and remove to drain on paper towel when brownish in color. 6. Serve with chutney. |
