A really simple yet wonderful dressing that complements most vegetable salads Ingredients:
2 lbs ripe tomatoes, halved and seeded |
1/4 cup extra virgin olive oil |
7 ounces red wine vinegar |
3 tablespoons chopped onions |
2 teaspoons garlic cloves, finely minced |
tt salt and pepper |
Directions:
1. Brush the tomatoes with some of the olive oil and grill until lightly charred and softened. 2. Cool, peel and finely dice. 3. Combine all ingredients in a blender and blend for 7 - 10 seconds and refrigerate overnight. |
