Ingredients:
1/2 cup butter or margarine, softened |
1 cup firmly packed brown sugar |
4 eggs |
1 tablespoon baking soda |
1 tablespoon milk |
3 cups all-purpose flour |
1 teaspoon ground cinnamon |
1 teaspoon ground nutmeg |
2/3 cup bourbon |
5 cups chopped pecans |
3 cups raisins |
3 cups candied red cherries, chopped |
1 1/2 cups candied red pineapple, chopped |
1 1/2 cups candied green pineapple, chopped |
1 (7-ounce) can flaked coconut |
1 1/2 tablespoons grated orange rind |
Directions:
1. Cream butter in a large mixing bowl; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Dissolve soda in milk; stir into creamed mixture. 2. Sift together flour, cinnamon, and nutmeg in a medium mixing bowl. Add to creamed mixture alternately with bourbon, beginning and ending with flour mixture. Stir well after each addition. Stir in remaining ingredients; mix well. 3. Drop dough by teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 300° for 25 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks. |
