Aida's Corn, Tomator and Avocado Salad |

From Aida Mollenkramp Ingredients:
1 1/2 c cilantro, (fresh) |
1/2 c extra-virgin olive oil |
2 t lime juice (fresh) |
1 tsp lime zest (finely grated) |
1/2 tsp. kosher salt |
1 tsp. ground pepper |
3 c corn kernels (fresh) |
1 1/2 lbs grape tomatoes, halved |
1 lb fresh mozzarella, diced |
2 avocados, diced |
Directions:
1. Combine the dressing ingredients in a blender, using 2 tsp. salt and pepper to taste, process until smooth. 2. combine the salad ingredients in a large bowl and toss with the dressing. 3. Let sit at least 15 minutes before serving, or cover and refrigerate for up to 4 hours. |
