Aidas Corn Tomato And Avocado Salad |

Creamy,refreshing salad for a summer supper side dish. Ingredients:
dressing |
11/2 c packed cilantro |
1/2 c extra-virgin olive oil |
2 tbs fresh lime juice |
1 tsp fine grated lime zest |
kosher salt and fresh ground pepper |

4 ears corn,kernals removed(about 3 cups) |
11/2 lbs grape tomatoes,halved(about 3 cups) |
1 lb fresh mozzarella,diced |
2 med. avocados,diced |
Directions:
1. Combine dressing ingredients in a blender,using 2 tsp salt,and pepper to taste; process till smooth. 2. Combine salad ingredients in a large bowl and toss with dressing. Let sit at least 15 mins before serving,or cover and refrigerate up to 4 hours. |
