Agurksalat: Scandanavian Cucumber Salad (Vegan) |

Agurksalat, or known in English as cucumber salad, is served in all Scandanavian countries. This little salad is easy and inexpensive to prepare. The key is slicing the cucumber paper-thin, my Norwegian cookbook recommends a Norwegian cheese slicer, I recommend a good knife and some patience. :) Ingredients:
1 large cucumber |
2 teaspoons vinegar (probably white or apel-lingonberry) |
1/2 teaspoon sea salt |
1/2 teaspoon dried dill weed |
1 teaspoon sugar |
1/4 teaspoon white pepper |
1 tablespoon chopped fresh parsley |
Directions:
1. Slice the cucumber paper-thin. 2. Mix the vinegar, salt, sugar, dill, and pepper in a small bowl then pour over the cucumber slices, dispersing well. 3. Sprinkle with the fresh parsley before serving. |
