Aguadito De Pollo - Peruvian Chicken Soup |

This is a hearty delicious and spicy chicken soup that will heal all! ...at least that's what my mother told me! Ingredients:
4 skinless, boneless chicken breast halves or 6-8 drumsticks / thighs |
1/2 cup olive oil |
1 medium onion, chopped |
1 carrott sliced (optional) |
1 teaspoon minced garlic |
1 tablespoon aji paste (or to taste) |
1 whole bunch of finely chopped cilantro |
1 cup green peas |
10 cups chicken broth |
1 tsp. cumin |
4 potatoes, cut in quarters |
1 cup uncooked white rice |
salt and pepper to taste |
Directions:
1. Season the chicken with salt and pepper. 2. Heat the olive oil in a large, heavy pot over medium-high heat. 3. Stir in the onion, garlic, and aji; cook until the onion has softened, about 1 minute. 4. Add the chicken, and continue to cook for 5 minutes. 5. Stir in the cilantro and cook for 1 minute. 6. At this point you may wish to shred the chicken or cut it into bite size pieces. (Thighs and drumsticks make for a nice presentation whole) 7. Pour in the chicken broth, potatoes, (carrot if you used it) and rice. 8. Add cumin. 9. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 30 minutes. |
