This thirst-quenching beverage, Spanish for fresh water, is a wonderful addition to any informal country inn menu. From Casual Cusines of the World.
Ingredients:
2 cups peeled seeded and diced ripe fruit, such as melon,pineapple,mango and/or papaya
2 1/2 cups water, preferably filtered
3 tablespoons sugar (or to taste)
Directions:
1. In a blender or a food processor fitted with the metal blade, combine the fruit, water and sugar.
2. Process on high speed until completely smooth, about 1 minute.
3. Pass through a fine-mesh sieve, pressing with the back of a spoon to extract as much juice as possible.
4. Chill thoroughly before serving.
