Aged Cheddar Turkey or Chicken Cutlets |

I got this recipe from a Canadian cheese magazine, all you need is cheese . It stated to use turkey, but there's no reason that you can't use chicken. You can replace the aged cheddar with gouda, mild cheddar, slices of brie or crumbled feta. This recipe can be prepared ahead of time and baked at the last minute. Enjoy! Ingredients:
2 tablespoons butter |
1 1/2 cups fresh mushrooms, sliced |
1 small red pepper, sliced into strips |
3 cups baby spinach leaves |
1 shallot, chopped |
1 garlic clove, minced |
salt & freshly ground black pepper |
4 large turkey or 4 large chicken cutlets |
4 ounces aged cheddar cheese, cut into 4 large sticks |
1/2 cup white wine |
Directions:
1. Preheat oven to 350°F. 2. In a skillet over medium heat, melt half the butter and saute vegetables with shallot and garlic until slightly cooked. Season and let cool. 3. Spread vegetables over cutlets and add aged cheddar sticks. Fold edges over filling and and roll cutlets to trap filling inside. Tie or pin with toothpicks. 4. Melt remaining butter in skillet over high heat and quickly brown rolls on all sides. Set in ovenproof cookware and bake for 20 to 30 minutes or until cooked through. 5. Add wine to hot skillet to collect juices, then pour over cutlets. Cook for another 5 to 7 minutes. 6. Slice rolls, diagonally before serving to reveal stuffing, and drizzle with cooking juices. |
