After Thanksgiving Omelet |

The perfect omelet for the day after thanksgiving. There are always tons of leftover mashed potatoes. Ingredients:
4 eggs |
1 c mashed potatoes |
2 tbsp butter |
1 tbsp dried parsley |
1 tsp salt |
1/2 tsp white pepper |
Directions:
1. Beat eggs. 2. Pour eggs into mashed potatoes while beating the potatoes. 3. Add the parsley, salt and pepper, and mix. 4. Melt butter in an omelet pan. 5. Put potatoes in the pan and smooth out with the spatula. 6. Cook until browned, and fold as an omelet. |
