Actually, this is a tad more involved than I would do for an after school snack, but the results are delicious. Ingredients:

1 cup sugar |
1/2 cup butter, softened |
1 egg |
1 1/2 cups applesauce |
1 1/2 cups flour |
1/2 cup cocoa |
2 teaspoons baking soda |
1 teaspoon vanilla |
frosting |
1 cup confectioners' sugar |
2 tablespoons butter, softened |
2 tablespoons cocoa |
1 teaspoon vanilla |
milk, to make smooth |
Directions:
1. Preheat oven to 375º. 2. Cream sugar and butter for cake then add remaining ingredients. 3. Bake in a 9 square pan for 30-40 minutes. 4. Cool. 5. Mix together frosting ingredients and frost cake when completely cool. |
