In my Chicken Boat at Apple Island post, I mentioned how I had developed fun after-school-snack recipes for my son...and his friends...last year. This one is very easy and uses basic ingredients. The funny part of the story is that I tricked the kids with using spinach...and now the LOVE spinach! The recipe measurements are for 1 wrap, cut into 4-5 pieces. Multiply as necessary.
Ingredients:
1 flour tortilla, i like to use the uncooked kind and cook myself, they taste so much better than the dried, old store
2 slices deli ham
2 slices deli turkey
2 tablespoons onions, dip the store bought chip dip variety usually found in the refrigerated produce section
6 -8 spinach leaves, cleaned and dried
3 tablespoons shredded carrots
3 tablespoons shredded cheese, any kind that your kids like
3 -4 thin slices bell peppers
Directions:
1. If you purchased uncooked tortillas, cook first.
2. Spread the dip on the tortilla. Layer the meat, cheese, and vegetables on top of the dip. Roll.
3. Slice into 4-5 pieces on an angle, so they are finger food size.
4. Serve to your kids with a side of fruit or another healthy side.
