AFRICAN PINEAPPLE CABBAGE SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Guzman Estate in Tulsa, Oklahoma in 1989. Ingredients:
1 pound chinese cabbage shredded |
1 cup celery chopped |
1 green pepper cut into strips |
1 red pepper cut into strips |
1 cup fresh pineapple diced |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
1 teaspoon salad herbs |
dressing |
1 cup plain yogurt |
2 tablespoons sour cream |
3 tablespoons milk |
Directions:
1. Put cabbage in large bowl. 2. Add celery, green peppers, red peppers, pineapple, salt, pepper and herbs. 3. Mix yogurt, sour cream and milk together until consistency of heavy cream. 4. Pour over salad right before serving. |
