28 oz. tomatoes, crushed |
1/2 cup brown rice |
1 cup water |
1 clove garlic, crushed |
1 tsp. red pepper flakes |
1/3 cup reduced fat peanut butter |
Directions:
1. add the water, rice, and tomatoes to a pot and bring to boil. Reduce to low and add the red pepper flakes and garlic. Simmer, covered, until brown rice is cooked, about 30 minutes. Stir in peanut butter and serve. |
