Hope Springs Recipe Ingredients:
2 cups onions |
1 tbls olive oil |
1/2 tsp cayenne pepper |
1 tsp ginger root |
1 clove garlic, minced |
1 cup carrots, chopped |
2 cups sweet potatoes, chopped |
4 cups vegetable broth, low sodium |
2 cups tomato juice |
1 cup peanut butter, smooth |
Directions:
1. Chop onions and saute in oil until translucent. 2. Stir in cayenne, garlic and ginger. 3. Add carrots and saute a couple more minutes. 4. Mix in potatoes and broth, bring to a boil, then simmer until vegetables are very tender. 5. In a blender or food processor, puree the vegetables with the cooking liquid, tomato juice and peanut butter. 6. Return the puree to soup pot, tast and adjust seasonings. |
