I found this recipe in an African foods cookbook. Ingredients:
3 cups of water |
1 medium zucchini, chopped |
3/4 cup chopped fresh okra |
2 sweet potatoes, peeled and chopped |
1 onion, sliced |
1 teaspoon salt |
1/2 teaspoon black pepper |
1 teaspoon ground ginger (or 2 teaspoons of fresh grated) |
1/2 cup peanut butter |
1/2 teaspoon red pepper flakes |
2 tomatoes, diced |
1 cup of tomato paste |
2 hard boiled eggs, chopped |
cooked rice |
Directions:
1. Simmer the zucchini, okra, sweet potatoes, onion and salt, black pepper and ginger in the water in a large pot until tender. About 10 to 15 minutes. 2. Add the peanut butter, pepper flakes, tomatoes, and tomato paste to the mixture. 3. Stir well and simmer on low heat for about 15 minutes. 4. Serve over cooked rice and top each serving with the cooked eggs. |
