Peanuts are common in African cuisine. Ingredients:
4 lbs chicken pieces |
1/4 cup vegetable oil |
1 teaspoon salt |
1 teaspoon curry powder |
1 large onion (peeled and sliced) |
1 large sweet red pepper (cut into strips) |
1 large tomato (chopped) |
1 1/2 cups uncooked rice |
1/4 cup crunchy peanut butter |
1/4 cup warm water |
Directions:
1. Brown chicken in vegetable oil in large frying pan; set aside. 2. Remove all but 2 tablespoons of oil and drippings in pan. 3. Stir in curry powder and salt, onion, red pepper, tomato and rice. 4. Cover and simmer 5 minutes; return chicken to pan. 5. Cover; simmer until chicken is tender. 6. Remove chicken to large platter. 7. Blend peanut butter and water; stir into vegetables. 8. Heat to boiling. 9. Spoon over chicken. |
