A friend gave me this recipe.. Ingredients:
2 eggplants, peeled and cubed into chunks |
1 onion, chopped |
1/2 tbls garlic, chopped |
1/2 tsp turmeric |
1 tomato, chopped |
1 tbls tomato paste |
1/2 green or red bell pepper, diced |
2 cups warm water |
2 tbls olive oil |
salt and pepper to taste |
plain yogurt to garnish |
Directions:
1. In a skillet, saute onion with olive oil until tender 2. Add garlic and turmeric 3. Saute for another minute or 2 4. Add tomato, tomato paste, and chopped pepper 5. Mix well, then add water 6. Add salt and pepper, then eggplant 7. Cover pan and simmer on medium heat for about 10 minutes 8. Serve with dollop of yogurt on top |
