Affordable Truffled Potato Wedges |

These salty, tangy potatoes are a great way to showcase this special seasoning. Don't over do it, a little goes a long way! Please see my notes at the end of the recipe. :) Ingredients:
2 lbs potatoes, cut into wedges(i don't bother peeling) |
about 2t olive oil |
2t malt or red wine vinegar |
1t semi coarsley ground pepper |
2t truffle salt |
about 1/4 cup fresh grated parmesan cheese |
Directions:
1. Toss potato wedges with olive oil. 2. Sprinkle with salt and pepper and toss once more. 3. Bake at 425 for about 15 minutes. 4. Flip all the wedges over, sprinkle with Parmesan cheese and bake another 10-20 minutes, until fork tender and golden brown 5. Drizzle with vinegar just before serving. 6. ***Truffles are very distinct with their heady, earthy flavor... and a hefty price tag to reflect their uniqueness. Truffle oil is more affordable, but, it's oil... it will go rancid unless you use it in a timely fashion. And, let's face it as tasty as it is, it's not something you want to use on everything. My solution? Truffle infused sea salt. You even go near the bag, and you know you have truffles near by, but it's affordable, and shelf stable for so much longer. I get mine from a site called . |
