Adobo Tuna with Black-Eyed Pea Salad |

Adobo is a garlic, cumin, and sour-citrus marinade. Ingredients:
1/2 teaspoon dried oregano |
1/2 teaspoon ground cumin |
1/4 teaspoon salt |
4 garlic cloves, minced |
4 (1/2-inch-thick) tuna steaks (about 1 1/2 pounds) |
1 teaspoon olive oil |
1 teaspoon cracked pepper |
black-eyed pea salad |
garnishes: lime slices, fresh cilantro sprigs |
Directions:
1. Combine first 5 ingredients in a large heavy-duty zip-top plastic bag; add tuna. Seal; chill 1 hour, turning occasionally. 2. Remove tuna from plastic bag, discard marinade. 3. Place tuna on a lightly greased rack in a broiler pan. 4. Broil 4 inches from heat (with electric oven door partially open) 4 minutes or until desired degree of doneness. Do not turn. Serve with Black-Eyed Pea Salad. Garnish, if desired. |
