A filipino recipe.
Ingredients:
for the adobo rice, you will need
3 tablespoon extra virgin olive oil
1 teaspoon minced garlic
4 cups cooked rice, loosened
1 cup adobo sauce
1 cup adobo flakes, toasted
green mango topping
1/3 cup thinkly sliced onions
2/3 cups chopped tomatoes
1 cup shredded green mango
salt and pepper
Directions:
1. Use a wide pan or kawali. Place on medium heat and add oil and garlic. Cook until the garlic edges start to turn golden.
2. Put loosened rice into the pan and add the adobo sauce. Mix very well until all the grains are fully coated by the sauce.
3. In a bowl, mix together the sliced onions, tomatoes, green mango. Season with a little salt and pepper if desired.
4. Place steaming hot adobo rice in individual serving bowls. Top with green mango mix and adobo flakes.
