One slice is worth a thousand words! This is an amazingly moist carrot cake which I first tasted over 20 yrs. ago at a cousin's home. She served this luscious cake and I didn't leave without the recipe. Try it ... I think you'll definately agree with me...it's the BEST! Ingredients:
3 cups flour |
2 cups sugar |
4 eggs |
1 cup corn oil |
3 cups finely grated carrots |
1 cup walnuts (chopped) |
1 cup raisins |
2 teaspoons baking powder |
2 teaspoons baking soda |
2 teaspoons vanilla |
1 teaspoon nutmeg |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1 (8 ounce) package cream cheese (room temperature) |
1/2 cup powdered sugar |
1/2 teaspoon vanilla |
Directions:
1. Sift and mix all dry ingredients. 2. Add all wet ingredients. 3. Pour batter into well-greased tube pan (4 inches high x 9 1/2 inches diameter, smaller can be used it just turns out higher). 4. Bake in 350 degree oven for approximately 1-1/4 hours or until cake tester comes out clean. 5. Cool and spread on cream cheese icing. |
